Agree on this, but then you need some sort of catch up mechanic for newer players. If they introduce the grandmaster rank then they should decrease the amount of time you need to hit Guru.
Rather have 1-rank above Guru 50 aka Grandmaster, which allows you to buy the "grand-master" outfit for the associated lifeskill, something like the chef's hat when reaching Guru 1.
But just making infinite levels is a big NO, as it would require a rework on mastery, futile & mindless grinding till Crimson Desert launches, and trading + active fishing is still dead-beat-content which should be looked at first imo.

Grandmaster could be a glory tier, no mastery granted, but just there to show off how much you do your lifeskill. As far as it interfering with them remaking other lifeskills, adding a big number with no benefits isn't a huge load, it just means extending the scale to allow for bragging.
