I'd love to have a potion or an item that turns my favorite mount from any T to T8, an honorary act so to say because it knows all the tricks (courser skills), it can even walk sideways like an Egyptian, and because I knew nothing about Ts and Ls but now that I do I want to have it this honour.

I'd suggest that the item is rare to find, as rare as our friendship, maybe also to buy for an eyerolling fortune in certain places and shops. The item may include the opportunity to still aim for T9 if desired, onetime per family, skills untouched, T8 Level 1 maybe.

I know this might not be what you're looking for, but there are appearance change tickets for mounts.
This way you can change the skin and appearance of any mount, including a Tier 8, to that of your favorite horse.

It's not the same horse... but if you name it the same, at least it can give you that feeling.

I think it would be much better to just get rid of those tiers altogether. Let's just distinguish between "normal" horses, dream and mythical ones. Any plain horse could be awakened to dream as long as it does have all courser skills. Tiers are just as obsolete as levels for pets (which were removed), especially now that tier 1-5 horses are gone anyway. And it would make things much more simple.

Then, I'd like to see an alternative path for awakening horses, where the appearance of the horse stays the same. Without those gimmicks like gliding, being on fire etc. just give them exceptional stats like speed, hp etc. - you might call them thoroughbred horses, if you want. This would give horse lovers a new hobby collecting horses that are both fast and still have their original horse appearance. Not everyone likes the appearance of  Dream/Mythical horses (I, for one, really don't ). This would also be the perfect opportunity to reintroduce the original T1-T5 appearances into the game, without hiding them behind a paywall (appearance change ticket).

@Caithy That's a great idea. After ridding of the lower growth levels I am bit unmotivated aquainting and adventuring with new horses because of the fateful T. I didn't mind when it didn't count but now that it counts I mind. Regarding coats I also would love to keep mine's, not only because some of them are bought. With new regions introduced or coming one for example could introduce new coats because: foreign region - foreign patterns, therefore foreign (new) Mythical coats.
