Ellie's Shiny Seals will still be exchangeable even after the event ends next maintenance, right? I'm asking because I don't want to exchange seals for Ellie's Magical Elixir until I actually need it and I also don't want to lose out on any remaining exchanges.

Yes, your currencies will not disappear after the event ends and can be exchanged at any time.

In the past, you could keep your event tokens and redeem them with an NPC if the NPC was still available after the event. However, now, NPCs are no longer used with event tokens. Instead, you can collect the tokens and they will go to your event token inventory as found here:
Once there, you can exchange these tokens for whatever even after the event has ended. I hope this helps!
