Awakening Striker or Woosa ?

Looking for something to use my last time piece but looking for good strong bossing/grinding and solo and low apm but easy to master/learn as well currently playing Woosa but finding fustrating AF but looking into Awakeing Striker due to this seasonal character has FULL pen armor/weapons/acceesseries (except the neck) ;(
Also EASIEST on hands due to Carpal Tunnel

This is the part where my bias tells you to try & play wizard because it's easy to do the things you mention i.e grinding w/ low apm
That said, there are plenty of classes that can do that.
Striker is one of them, as well as Succession Berserker, Succession Sorcress, Awakening Mystic, Succession Lahn, Awakening Guardian, Succession Hashashin, and Succession Nova. All of those classes would work for low apm grinding. They would vary in efficiency at each spot you might go to, but they all fit the low apm bill.
