Mounts (firstly ground mounts maybe later flying mounts ?) like wolves, dragons, lizards, running birds, boars, mystical creatures, ghosts, etc. etc. most tribes has their own mounts in the game just allow the players to have them.
How PA could do it: You could tame them but of course the cooler the mount the harder to get.
Like for example you want to tame a wolf.
First of all You'd need a specific level of taming skill to start taming wolves.
I don't really want to go into the details but you'd need to catch the animal with a trap. Then you need to put the wolf in a cage and feed it daily and after a several day or week when your wolf starts to know you, you can release him from the cage.

In the first few weeks you have to bring him as a pet and hunt, fish, grind together and when the bond strong enough you can ride it.
Same with dragons etc just more difficult to hit the right button or farm the prefered food to feed the creature.
Breeding between similar creatures should be a thing aswell so you can create "unique" mounts like breeding a tiger and a lion, or two different type of dragon, or two different type of lizard etc.
Tamer would start with +1 level taming skill because you know she is a tamer. :)
You couldn't buy mounts from central market but you could buy mount accesories for different type of mounts.
Like you need to be an expert life skiller to make saddle and harness for a dragon which is essential to ride it.
Armors for mounts could be a huge part of collecting aswell. Imagine a player with a fully equipped dragon you would know he is the big guy around.
And I didn't even start the mount perks. Like what if you could farm with your dragon. I mean one fire breath and everyone dead around you.
Or you could find hidden (and expensive) life skill materials with your boar mount (based on truffle sniffing pigs)
Or you could find hidden treasures around the whole world with the sniffing ability of the wolves.
Literally endless possiblities to keep the player busy for years.

While I understand your viewpoint you can't ask everyone to go back and play WoW because this is your own personal playground. This is a product of a business unit and as business they go for the profit and more varity in a game can increase your player base which increase your profit by a lot. but again:

95% don't give a damn about mount training and what not. This is not hello kitty online/pony simulator, calling this as endgame is actually an offense for an mmo lol...

It would be really fun and exciting to be able to tame baby wolves/dragons/etc.

And then "RAISE" them to eventually achieve dream horse status.

Instead of breeding, make it a system where you raise them. That way we can still capture them, but perhaps they aren't ready to be used as mounts yet so horses aren't subpar.

It would be neat to have your baby wolf/dragon out in combat and slowly gaining XP that way.

Then once they are full grown tier 9, you can use them as a combat pet. Further tier 10 would be using them as mounts, too.

The code is already there with the tamer class' pet doing combat and being mountable.
