I think you'll enjoy ONE: FC, it's pretty unique in that they aren't strictly MMA, they feature Muay Thai, kickboxing, grappling and boxing matches too. 

Right now my favorite ONE fighters are Rodtang Jitmuangnon (Muay Thai), John Lineker (MMA), and Stamp Fairtex (Muay Thai and MMA).  Really explosive stuff.  Big female division match coming up, Stamp Fairtex vs reigning champion Angela Lee should be a great macth.  Demitrious Johnson VS Rodtang Jitmuangnon will be another interesting one....Rodtang is a Muay Thai division champion and Demitrious Johnson one of the top MMA guys -- their match will rotate from Muay Thai rules in round 1, MMA in round 2, Muay Thai in round 3, and MMA in round 4.  Matches are usually score cumulatively and not round by round which is different from some other organizations.

If you're into grappling, Shinya Aoki's older fights are a spectacle of technical mastery.
