Another option would be to install Windows 7 on one Partition and Windows 10 on the other and use DUAL BOOT. Then use one OS for Genshin and the other for BDO.

If you just game with the Windows 7 installation and don´t access things that are relveant to you on your PC you should not care about update hell. If you want to make sure then you can limit access to or even hide hide entire critical partitions within Windows. A more standard measure would be to game from a standard User account (a non-Admin account).

I don't get it - apparently you can't run both Windows 7 and 10 in the meantime? So what's the point of doing what this article says
