I am guessing you are talking about Nevaran Stepes or Pollies, because I cannot think of another location that has gathering where the corpses disappear too quickly.
In both of those locations if you miss a corpse it means that the mob you are gathering from is going to respawn very soon. If the mob you are gathering from had a 1h spawn and you couldn't gather it all you would have a point, but that is not the case 99% of the time.

Still, they could make this one place better. Why should there be problems like this anywhere?
