So I did this quest the first time like 3 years ago not knowing that it would literally wipe out all of my Navern Steppe ecology knowledge.  I refuse to do it again, especially where I'm at full "S" knowledge.

I'd like to suggest changing this quest so that it doesn't wipe out your knowledge.  Just have it send you to the Calpheon library to learn about making books, but not actually require you to make one.

If you still have the book you can just show her a bookshelf.  You don't have to eat your knowledge again to get credit.  You can also preorder the book from the CM.

Its a stupid quest, I agree.  I've but to complete the last quest, but have not because all your knowledge gets wiped in return for a dumb room decoration.

Yeah, I did that twice and then realized I could just trade in the book from the quest reward the previous character got.  No more wasting S knowledge for me!
